Sautéed Summer Squash with Cheese

1-2 garlic cloves diced
Olive oil
Summers squash cut in 1 inch chunks (you can pre cook the squash in simmering water if you like it a little soft)
I large tomato sliced thick
Shredded cheese of your choice ( I used shredded cheddar and torn slice of provolone)
Dried Italian seasonings
Fresh ground  black pepper
Sea salt
In a medium saute pan, heat the oil over a medium flame.  Add the garlic and sauté till you can start to smell the aroma.  Add the squash and stir lightly until tender then add tomato slices.  Season with the dried Italian seasoning, black pepper and sea salt to taste. Cover and set heat to simmer until tomtaoes cook down a bit. turn off the flame,  sprinkle the top with cheese and cover to let the cheese melt.  Your dish is ready to serve!
