Moroccan Orange Cake


4 Eggs                                         1/2 C Fresh Orange Juice                     1 1/2 C  Sugar

Orange Zest from 2 Large or 3 Small Oranges                                   2 C Flour

1/2 C Vegetable Oil               4 Tsp Baking Powder                              1 Tsp Vanilla

1/2 Tsp Salt                               1/4 C powdered Sugar                          3 Tbsp Warm Water

Preheat oven to 350 degrees.  Grease and flour a tube pan.  Zest and juice oranges.  Using an electric mixer, beat eggs and sugar for about 2 minutes, continue to beat as you gradually add in the oil. Stir in flour, baking powder and salt.  Add orange juice and beat until smooth.  Next stir in the orange zest and  vanilla( reserve a tsp  of the zest for the garnish). Pour batter in to prepared pan and bake for 40 min or until cake springs back when touched.  Allow cake to cool for 10 min.  Invert onto plate and the to rack to finish cooling.  Mix powdered sugar and water to create glaze.  Drizzle over cake once completely cool.  sprinkle with reserved zest.
